Circle Z Baked Beans

Slow-baked and deeply flavorful, these beans pair sweet molasses with savory smoked bacon and Circle Z's tangy barbecue rub.

Cook Time: 2 to 2.5 hours

Ingredients:

  • 6 slices Wayne Jacob’s Smoked Bacon, chopped

  • 1 onion, chopped

  • 3 cloves garlic, chopped

  • 1 green bell pepper, diced

  • 1/2 cup Circle Z Barbecue Rub

  • 3 oz tomato paste

  • 1/4 cup molasses

  • 1/4 cup apple cider vinegar

  • 1 tbsp mustard seed

  • 1 lb navy beans, soaked overnight and drained

  • 3 quarts water

Instructions:

  1. Preheat oven to 350°F.

  2. In a 6-quart oven-safe pot, cook bacon over medium heat until rendered.

  3. Add onion, bell pepper, and garlic. Sauté until tender.

  4. Stir in rub, tomato paste, molasses, vinegar, and mustard seed.

  5. Add beans and water. Bring to a boil.

  6. Cover and bake for 2-2.5 hours or until beans are tender. Tip: For smokier flavor, add a chunk of Wayne Jacob’s tasso before baking
